Graves is a wine region on the left bank of the Bordeaux region of France, characterized by the gravel soils that give it its name. Unique among the sub-regions of Bordeaux, Graves is equally respected for its red and white wines. The AOC Graves, which covers both red and white wines, is the catch-all appellation of the district. Police ordered the evacuation of more local residents in the Landiras area yesterday (Monday 18 July), with Liber Pater’s vineyard in Graves also evacuated as firefighters continued to try to contain a large forest fire that has been burning for the past week. This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
