The wine region of Esp&iacuterito Santo

Coastal state in south-eastern Brazil, one of the cooler zones in the country in its inland massifs, humid subtropical climate. Pioneer approach of "colheita de inverno" (double pruning for winter harvest). Syrah is the signature red: full-bodied and sun-drenched with notes of blackberry, plum, black pepper, spices and a smoky touch, round tannins. Taut Sauvignon Blanc as signature white with lively notes of citrus, herbs and passion fruit.

The word of the wine: Chaptalization

The addition of sugar at the time of fermentation of the must, an ancient practice, but theorized by Jean-Antoine Chaptal at the dawn of the 19th century.
