The wine region of Pazardjik
Viticultural cradle of the Upper Thracian Plain in southern Bulgaria (5,000 years of history), sheltered by the Sredna Gora mountains and the Rhodopes. Mavrud, an ancient local variety, is the signature red: deep ruby robe with intense blackberry, black cherry, plum, spices, tobacco and a balsamic-leathery touch, firm tannins and exceptional ageing potential. Cabernet Sauvignon, Merlot and Rubin (local Nebbiolo×Syrah) as structured reds. Rumelia as flagship.

Birthplace of Mavrud on the Bulgarian Thracian plain (around Asenovgrad), deep alluvial soils, hot continental climate. Mavrud the red signature (ancient indigenous variety with blue-black skin, harvested mid-October): deep and colourful with blackberry, black cherry, candied plum and liquorice touch, firm tannins and lively acidity — ages superbly in oak (leather, tobacco, spices). Dense Cabernet Sauvignon and supple Merlot as complements. Bulgaria's great identity grape.

Quantity of grapes harvested per hectare. In AOC, the average yield is limited on the proposal of the appellation syndicate, validated by the Inao. The use of high-performance plant material (especially clones) and better control of vine diseases have increased yields. This is not without consequences on the quality of the wines (dilution) and on the state of the market (too much wine). We must not over-simplify: low yields are not synonymous with quality, and it is often in years with generous harvests that we find the greatest vintages (1982 and 1986 in Bordeaux, 1996 in Champagne, 1990 and 2005 in Burgundy...).
