The wine region of Valtiendas
Vino de Calidad from Segovia province, small vineyard (~100 ha) bordering Ribera del Duero at 900 m, continental climate with hot summers and cold winters. Tempranillo (Tinto Fino) is the dominant signature red: deep robe with intense black cherry, blackberry, plum, leather and a spiced hint, firm tannins and fine ageing potential worthy of its prestigious neighbour. Supple Garnacha, Cabernet, Syrah and Merlot as complements. An unsung Segovian gem.
The wine region of Castille-et-Léon
Cradle of great Castilian reds on high-altitude plateaus (450-1000 m) of the Duero. Tempranillo king (Tinto Fino, Tinta de Toro): powerful, structured reds with notes of black cherry, blackberry, plum, leather and spices, firm tannins and length worthy of long ageing. Stars: Ribera del Duero (Vega Sicilia, Pingus), fleshy Toro, Bierzo (fresh mineral Mencía). Lively herbaceous Verdejo whites from Rueda, cut grass and citrus.
The word of the wine: Balance
Harmony of the different organoleptic elements of a wine. The balance is linked to the typicity of each wine. The sweetness of a sweet wine is an element of its balance, whereas a Sancerre or a Chablis will be asked to be lively and dry.
