The wine region of Minnesota

Minnesota is a state located in the North Central United States, bordered by Canada to the north and Iowa to the South. The state's Harsh continental Climate makes viticulture difficult. However, research at the University of Minnesota on cold-hardy Hybrid Grape varieties has opened up opportunities for Minnesota wine producers. The state covers 225,000 square miles between latitudes 43°N and 49°N, which puts it roughly on par with the United States.

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
