Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Also vinified sparkling and widely exported (Sonoma, Margaret River, Casablanca). A Burgundian variety, a cross of Pinot Noir × Gouais Blanc, half-sibling of Aligoté.

Cool-climate AVA in southern San Luis Obispo (1990) facing southwest over 16 miles: signature Chardonnay and Pinot Noir — elegant with vibrant acidity and mineral depth. Pacific winds and morning fogs keep freshness, aromatic development without acidity loss. Pinot Noir with fresh cherries, raspberries and fine spices. Lively Chardonnay with citrus and green apple.
