The wine region of Valle de la Orotava is located in the region of Iles Canaries of Spain. Wineries and vineyards like the Domaine Tajinaste or the Domaine Envínate produce mainly wines red, white and pink. The archipelago of the Canary Islands (or Las Canarias) is an autonomous community of Spain located in the North Atlantic Ocean, 110 km from the west coast of Morocco. The wine trade there is far from famous - few local wines come out of the Canary Islands - but there is a Long and unique wine tradition in the region. Prolonged contact and exchange between the juice and the grape solids, especially the skin. Not to be confused with the time of fermentation, which follows maceration. The juice becomes loaded with colouring matter and tannins, and acquires aromas. For a rosé, the maceration is short so that the colour does not "rise" too much. For white wines too, a "pellicular maceration" can be practised, which allows the wine to acquire more fat.
