Discovering the wine region of Australie du Sud

SouthAustralia is one of Australia's six states, located (as the name suggests) in the south of the vast island continent. It's the engine room of the Australian wine industry, responsible for about half of the country's total production each year. But there's more to the region than quantity - countless high-quality wines are produced here, most from the region's signature Grape, Shiraz. These include such fine, collectible wines as Penfolds Grange, Henschke Hill of Grace, Torbreck The Laird and d'Arenberg The Dead Arm.

South Australia's wine portfolio is heavily weighted towards Powerful red wines, most of which are made from Shiraz. Another grape variety that thrives here is Cabernet Sauvignon, the best examples of which come from the Limestone Coast in the far south-east of the state (notably Coonawarra, Padthaway and Robe). Grenache has also proved well suited to the South Australian Climate and winemaking style, particularly when combined with Shiraz and Mourvedre (also known as Mataro in Australia) to create the classic Australian GSM blend. European varieties as diverse as Tempranillo, Nebbiolo, Montepulciano and Petit Verdot are also present in South Australian vineyards, but only in small quantities.

Discover the grape variety: Colombard

Colombard is one of the oldest grape varieties in the Charentes. This golden white grape variety is a cross between Chenin and Gouais. The young leaves of colombard are yellow with bronze patches. The adult leaves may be three-lobed or whole, depending on the variety. Its branches are cottony. The bunches of this variety are thick and cylindrical. Its elliptical berries are medium-sized. They change color until they ripen, ranging from greenish white to golden yellow. Colombard is associated with an average budding. It is particularly susceptible to leafhoppers, grape worms, mites, mildew, powdery mildew and gray mold. It is also sensitive to water stress, but is not very sensitive to wind. It ripens late in the second half of the year. There are a dozen approved clones of Colombard, the best known of which are 608, 607 and 606. This variety produces a full-bodied, fine white wine. Aromas of lime, nectarine, boxwood, citrus and exotic fruits are released.

Clare Tooley MW: My top 10 wines of 2021

Only 10? I feel a little like I do when faced with a hefty restaurant wine list. So many lovely wines, so little time to do them justice. My mind tracks the names, vintages and regions in fleeting time, flipping like a kaleidoscope. The effort is always accompanied by that nagging worry you’re missing the absolute gem. All the while, your dinner date is itching simply to get on and tuck into the evening with a good glass of wine. The Tooley household has been through a lot in 2021, including som ...
