Very deeply coloured reds with a profound purple robe, moderate tannins and an ample palate, with simple aromas of black fruits (blackberry, blackcurrant) and inky notes. A teinturier profile with red flesh. Formerly planted massively in the Midi to reinforce blend colour, now marginal, still grown in the Languedoc, Spain and South America. The wine region of Tuscany

Kingdom of Sangiovese: upright reds with cherry, plum, dried herbs and leather, lively acidity and firm tannins. Fleshy, food-friendly Chianti Classico DOCG, deep long-ageing Brunello di Montalcino (spice, tobacco, ripe black fruit), elegant Vino Nobile di Montepulciano. On the coast, Bolgheri crafts the opulent Cabernet- and Merlot-based 'Super Tuscans'. Some fresh white Vernaccia.

The word of the wine: Local wine

Table wine, but with the origin indicated. It corresponds to a particular legislation: the freedom to use grape varieties is greater than for the AOC, but the quality criteria such as the approval tastings can sometimes be more demanding. The legislation is still evolving, but for the moment there are three levels: regional (e.g. Vin de Pays d'Oc), departmental and local (e.g. Côtes de Thongue).
