Very old grape variety cultivated in northern Italy in the Piedmont region. It would have been introduced in Savoy at the beginning of the 17th century. An A.D.N. study, dating from 2011, shows that Hibou noir and Avana are one and the same variety. It should also be noted that Amigne is its half-sister, Rèze its grandmother and Rouge du Pays (a variety from the Swiss Valais) its grandfather.

Cantabria is a small region on the northern coast of Spain, wedged between the Cantabrian Mountains and the Bay of Biscay. Together with its neighbours, Asturias (to the west) and the Basque Country (to the east), this lush, mountainous region is affectionately known as España Verde, ("Green Spain"). Viticulture has not traditionally been important here, as the local soils are too fertile and the Climate too wet and windy for quality viticulture. The word of the wine: Malolactic fermentation
Called second fermentation or malo for short. It is the degradation (under the effect of bacteria) of the malic acid naturally present in the wine into milder, less aggressive lactic acid. Some producers or wineries refuse this operation by "blocking the malo" (by cold and adding SO2) to keep a maximum of acidity which carries the aromas and accentuates the sensation of freshness.
