Star of the Loire as a single variety (Chinon, Bourgueil, Saumur-Champigny) and of the right bank of Bordeaux in blends (Cheval Blanc at 60%). Also in semi-dry Anjou rosés. High-altitude Australian region (600-1,100 m) in New South Wales: signature Chardonnay as king white — racy and mineral with notes of lively citrus, green apple, pear, white flowers and a chalky touch, chiselled acidity preserved by the cool climate. Pinot Noir, spicy Shiraz and structured Cabernet as elegant reds (cherry, pepper, blackberry, cedar). Taut Sauvignon Blanc as backup. GI (1997), volcanic basaltic soils on Mount Canobolas (extinct volcano), cool high-altitude climate.
