Jura AOC northwest of Lons-le-Saunier (300–350 m, triassic limestone marls with star-shaped pentacrine fossils). Chardonnay and Savagnin define the whites — ouillé style: citrus, white flowers, hazelnut; sous voile style: intense walnut, spices, curry. Straw wines and Vin Jaune show the iconic "goût de jaune": walnut, apple, candied fruit, spice, cut by sharp mineral tension.
