Simple, colourful and fruity reds with a deep ruby colour, supple tannins and a light palate with moderate acidity, showing aromas of red fruits and discreet hybrid notes. Productive and resistant to phylloxera. Now marginal, it survives in a few heritage plots and French ampelographic collections, a witness to post-phylloxera hybridisation. French black hybrid variety obtained by Georges Couderc at the end of the 19th century.

The wine region of Saint-Saturnin
Languedoc AOP in northern Hérault (uniform argilo-calcareous terroir, full south exposure, cool Larzac winds): Syrah, Grenache, Mourvèdre, Carignan and Cinsault as signature reds — deep ruby-garnet robe, intense aromas of blackberry and cherry with spice, garrigue, leather and smoky or chocolatey notes, well-structured tannins balanced by fresh acidity lending length, elegance preserved by Larzac winds. Ageing potential 3–7 years.

Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault. Prolonged contact and exchange between the juice and the grape solids, especially the skin. Not to be confused with the time of fermentation, which follows maceration. The juice becomes loaded with colouring matter and tannins, and acquires aromas. For a rosé, the maceration is short so that the colour does not "rise" too much. For white wines too, a "pellicular maceration" can be practised, which allows the wine to acquire more fat.
