Romorantin is a white grape variety named after the town in the Loir-et-Cher region where it originated. It was François 1er who planted the first Romorantin vines here in 1519, and it has gradually been replaced by Sauvignon, considered more aromatic, and is only planted in the Loir-et-Cher region, where it is the source of the Cour-Cheverny AOC. Its bunches of small white berries, which turn pink when ripe, are resistant to grey rot. Cour-Cheverny wines are fruity white wines with aromas of white flowers, citrus fruit and honey. The wine region of Gigondas is located in the region of Rhône méridional of Rhone Valley of France. Wineries and vineyards like the Château de Saint Cosme or the Domaine la Bouissiere produce mainly wines red, pink and sparkling. The word of the wine: Extraction
All the methods (pumping over, punching down) that allow the colour and tannins to be extracted from the grape skin during maceration, before fermentation begins. It is also possible to macerate after fermentation, but gently, so as not to extract the tannins from the seeds, which are greener. Because of its solvent power, alcohol favours extraction.
