Structured, aromatic whites with a golden hue, a broad palate and preserved acidity, with refined aromas of candied citrus, grapefruit, yellow fruits (pear, peach), white flowers, light honey and spice notes. Adds structure and finesse to Béarn blends, both in crisp dry and passerillé sweet styles. Component of Pacherenc du Vic-Bilh AOC and Béarn AOC. Very rare native Béarn variety, undergoing a revival.

The wine region of Salice Salentino

Apulia DOC in the heel of the boot (Salento), realm of native Negroamaro (min. 75-90%) on terra rossa. Signature powerful sunny reds with notes of candied black cherry, blackberry, tobacco, leather, liquorice and sweet spice touch, round tannins and warm mouth — Southern heat in the bottle. Often completed by aromatic Malvasia Nera.


The wine region of Puglia

Heel of the boot, 80% red vineyard, sunny and generous. Fleshy, jammy Primitivo (= Zinfandel) with notes of black cherry, plum, chocolate and spices, powerful alcohol and melted tannins, a star in Primitivo di Manduria. Deep, structured Negroamaro (black-bitter) with a bitter finish in Salice Salentino. Structured Nero di Troia, spicy Susumaniello.

The word of the wine: Draft liquor (champagne)

After blending, the wine is bottled with a liqueur de tirage (a mixture of sugar and wine) and a yeast (selected yeasts). The yeast attacks the sugar and creates carbon dioxide. The fermentation, which lasts about two months, is prolonged by an ageing period (15 months minimum in total). The bottle is capped (some rare vintages are capped with a staple and a cork).
