Discover the grape variety: Cabernet-Sauvignon

Structured, tannic reds, deeply coloured, with aromas of blackcurrant, blackberry, cedar, tobacco and graphite, underpinned by firm acidity and fine ageing potential. Cornerstone of the great Médoc estates (Pauillac, Saint-Estèphe, Saint-Julien) and signature of Napa Valley, Coonawarra and Maipo. The wine region of Monteregio di Massa Marittima

Tuscan DOC in coastal Maremma (Grosseto province, around Massa Marittima), Mediterranean climate tempered by the sea, varied soils. Sangiovese is king in reds (≥80% in Rosso, Riserva, Rosato and Novello): fruity and sun-drenched with notes of red cherry, plum, Mediterranean herbs, garrigue and a spicy touch, round tannins — authentic Maremma expression. Firm Cabernet Sauvignon and supple Merlot as complements. Saline Vermentino and Trebbiano Toscano (≥50%) in whites.

The wine region of Tuscany

Kingdom of Sangiovese: upright reds with cherry, plum, dried herbs and leather, lively acidity and firm tannins. Fleshy, food-friendly Chianti Classico DOCG, deep long-ageing Brunello di Montalcino (spice, tobacco, ripe black fruit), elegant Vino Nobile di Montepulciano. On the coast, Bolgheri crafts the opulent Cabernet- and Merlot-based 'Super Tuscans'. Some fresh white Vernaccia.

The word of the wine: Rafle (taste of)

A taste considered a defect, characterized by an unpleasant astringency and bitterness, brought by the stalk during the vinification process. In order to avoid it, destemming before vinification is a common practice.
