Grand Cru of Riquewihr in the Haut-Rhin (~24 ha in a south-east-facing amphitheatre at 275 m, clay-marl soils decalcified on the surface, very rich in phosphoric acid which promotes early ripening). White wines are obtained by fermentation of the juice after pressing. A pre-fermentation maceration is sometimes practiced to extract the aromatic substances from the skins.
