Chameleon whites with taut acidity, ranging from mineral dry (Savennières, Vouvray sec) to off-dry and medium-sweet (Vouvray, Montlouis), sumptuous botrytised sweet (Quarts-de-Chaume, Bonnezeaux, Coteaux du Layon) and brilliant sparkling (Crémant de Loire, Vouvray brut). Aromas of quince, apple, honey, white flowers, beeswax and flint. An Anjou variety, also star of South Africa's Western Cape.

The wine region of Rio Negro

Southern Argentine vineyard in the high Patagonian valley (~39°S, among the world's southernmost), Limay and Neuquen terraces between 200 and 450 m, cold desert climate with abundant sunshine. Pinot Noir is the signature red king: elegant and airy with red cherry, raspberry, wild strawberry, violet, wild herbs and spicy touch, lively acidity and fine tannins. Supple Merlot, floral Malbec fresher than in Mendoza, crisp Sémillon. Chiselled style.


The wine region of Patagonia

Argentina's wine frontier, cool continental climate at low altitude (~200 m), strong natural acidity. Signature Pinot Noir, now a regional emblem: fine, silky reds with signature notes of tart cherry, raspberry, wild strawberry, undergrowth, violet and sweet spices, delicate tannins and taut freshness — a southern Burgundian style. Also Malbec fresher than in the north, round Merlot. Taut Sémillon, Sauvignon, Chardonnay, Riesling whites.

The word of the wine: Bordeaux barrel

Barrels of 220 to 225 litres. The toasting of the barrel to bend the staves (curved boards used to make the barrels) can vary according to the coopers and the demand. A gentle and slow toasting has little effect on the aromas. On the other hand, a strong toasting gives aromas of coffee or cocoa which will influence the taste of the wine. A wine barrel has already been aged for a year and has less impact on the wine than a new barrel.
