Gourmand finish; best young or short ageing. The near-exclusive star of Fronton AOC north of Toulouse (minimum 50% in blends), also made as expressive rosés. The wine region of San Benito County
California county on the Central Coast (neighbours Cienega Valley, Lime Kiln Valley, Paicines, Mount Harlan): Pinot Noir (28%) and Chardonnay (25%) are the signature kings — cool-climate profile shaped by Pacific breezes between the Gabilan Range and Santa Lucia, warm days tempered by marine winds and altitude. Cabernet Sauvignon (16%), Merlot (8%), Riesling (5%), Sauvignon Blanc (4%) and Syrah round out this geologically complex terroir.
The wine region of California
Powerful, sunny reds: dense Napa Cabernet Sauvignon (blackcurrant, chocolate, tobacco, ample tannins), spicy, jammy Zinfandel from the Sierra Foothills, silky red-fruited Pinot Noir on the cool coast (Sonoma, Russian River, Central Coast). Opulent, buttery Chardonnay, notes of yellow fruit and vanilla. Varied climate, from the hot interior to the Pacific-cooled coast. 80% of US production, 139 AVAs including Napa (1st AVA, 1981).
The word of the wine: Stirring
In the traditional method, the operation aims to bring the deposits against the cork by the movement of the bottles placed on desks. The stirring can be manual or mechanical (using gyropalettes).
