Estaing is an appellation covering red, white and rosé wines from a small region in southwestern France, in the Aveyron department. The vineyards, which cover the south-facing slopes of the Lot valley, produce a light, supple red wine made mainly from Fer and Gamay grapes. Rosé wines made from Gamay and Delicate white wines made from Chenin Blanc are also produced. The appellation covers three villages - Coubisou, Sebrazac and Estaing - which lie aLong the Truyère, a small tributary of the Lot.
Situated in the rather isolated wine region of Aveyron, north-east of the more famous Gascony appellations of Cahors and Madiran, Estaing has only two company appellations: Entraygues - Le Fel and Marcillac. Estaing - situated on the southern edge of the lower Massif Central mountain range - has a relatively high altitude which amplifies the continental Climate of the region, with hot, Dry summers and very cold winters. The vineyards are located on south-facing slopes at an average altitude of 300 metres above sea level, giving them excellent exposure to the sun throughout the growing season. The long, mild autumns ensure a long ripening period, and rainfall is concentrated in winter and spring.

White wines from the region of Estaing go well with generally quite well with dishes of shellfish, lean fish or fruity desserts such as recipes of jambalaya (louisiana), fillet of saithe with cream and mustard or rice with milk.
Mauzac is a grape variety, black or white (the white one is better known), originating from the South-West. It is mainly cultivated in the vineyards of Gaillac and Limoux (where it is called blanquette), on about 5,000 hectares. mauzac has medium-sized bunches, composed of berries whose colour can vary from green to red depending on the maturity of the grapes. This grape variety likes limestone and clay-limestone soils, and it is here that it is most productive. Its white wines are fat, with little acidity and marked by aromas of ripe apple, pear, honey, quince, vanilla and violet, typical of the great sweet wines of Gaillac. mauzac also produces the famous Blanquette-de-Limoux in rural method. In this region, Mauzac is competing with Sauvignon, Chenin and Chardonnay, especially for sparkling wines which are more similar to Champagne. It is also used in some appellations such as Entre-deux-Mers, Sainte-Foy-Bordeaux, Côtes-de-Duras, Vins-de-Lavilledieu...

Fer or Fer Servadou, which means "easy to keep" in Occitan, or Mansois in Aveyron or Braucol in Gaillac, is a black grape variety grown in the southwest. It owes its name to its shoots and wood, which are "hard as iron", with medium-sized bunches and firm, juicy berries, and is characterized by its herbaceous taste (which is also found in Cabernet Franc). Iron is a grape variety resistant to frost and disease. Its buds come out late, but its growth accelerates and it matures quite quickly. For a good production, it prefers long pruning. Iron is used alone for the AOC Marcillac wines and in blends for the wines of the Gaillac, Madiran, Béarn and Fronton appellations. Gamay is a Burgundian grape variety that has existed since the 14th century. For fear of competition with the pinot noir of Burgundy, gamay was finally uprooted and planted in the Beaujolais region, from Mâcon to Lyon. These siliceous and granitic soils suit it perfectly, and it gives its best here. But it is also planted all over France, such as in Lorraine, in the Loire Valley, in Bugey, in Savoie and in Auvergne. Gamay is early and very productive and needs to be limited so that quality prevails over quantity. Short winter pruning of the shoots and high density of vines per hectare are the methods that allow it to produce very fruity, fresh and greedy red wines. Gamay is also very popular in red wine futures, and produces wines from the Beaujolais region with very interesting character and ageing potential. The AOCs Crémant-de-Bourgogne, Mâcon, Anjou, Touraine, Rosé de vallée de la Loire, Côtes-d'Auvergne, Saint-Pourçain, Bugey, Gaillac, Côtes du Luberon... and many vins de pays are proud of it. Today, about 36,000 hectares of Gamay are cultivated in France, including 22,000 hectares in Beaujolais.
