The wine region of Vale dos Vinhedos

First Brazilian DO (2012) at the heart of the Serra Gaúcha (Rio Grande do Sul): signature Merlot as king red - supple and fruity with notes of cherry, plum, blackberry, red fruits and a touch of spice, round tannins and an elegant finish. Structured Cabernet and dense Tannat in support. Traditional-method sparkling wines of excellence (Chardonnay, Pinot Noir) - fine and persistent, a national flagship. Moscato in white.

Recognised specialty: traditional-method sparkling wines (espumantes), fresh and fruity, based on Chardonnay and Pinot Noir, among South America's finest. The word of the wine: Draft liquor (champagne)

After blending, the wine is bottled with a liqueur de tirage (a mixture of sugar and wine) and a yeast (selected yeasts). The yeast attacks the sugar and creates carbon dioxide. The fermentation, which lasts about two months, is prolonged by an ageing period (15 months minimum in total). The bottle is capped (some rare vintages are capped with a staple and a cork).
