Maipo Valley is one of Chile's most important wine-producing regions. Located just South of the capital, Central-valley/maipo-valley/santiago">Santiago, Maipo Valley is home to some of the country's most prestigious wines. The Central Valley (El Valle Central) of Chile is one of the most important wine-producing areas in South America in terms of Volume. Sulphur also gave the 18th century winegrower the possibility of extending the maceration period without fearing that the wine would turn sour and thus go from dark rosé wines to the red wines of today. Excessive sulphur, on the other hand, kills happiness, paralysing the aromas and causing headaches.
