The wine region of Amarone della Valpolicella Classico

Dry, powerful style of Valpolicella Classico (Fumane, Marano, Negrar, San Pietro, Sant'Ambrogio) via appassimento: Corvina (45-95%), Corvinone (≤50%) and Rondinella (5-30%) grapes dried ~120 days, losing 30-45% weight. DOCG since 2010, Venetian icon of concentration through dessication.

The wine region of Veneto

World star of Prosecco: fresh, light Glera sparklers with notes of pear, green apple and white flowers, fruity, convivial bubbles. Veronese reds from Corvina and Rondinella: light, crisp Bardolino, fruity Valpolicella, opulent, concentrated Amarone DOCG (black cherry, chocolate, raisin) from dried grapes. Mineral, almondy Soave (Garganega) whites, fresh Pinot Grigio. 97,500 ha, Italy's largest production.

The word of the wine: Physiological maturity

The stage of ripeness of the grape berry when it has reached an optimal weight and when the sugar and acidity levels have stabilized.
