The wine region of Struma River Valley
Warmest valley in south-western Bulgaria with sub-Mediterranean climate, vineyards around Melnik (cultivated for 8,000 years). Shiroka Melnishka Loza signature red (Churchill's favourite, broad-leafed indigenous variety): structured and spiced with notes of black cherry, blackberry, plum, tobacco, leather, Mediterranean herbs and a peppery touch, firm tannins — remarkable ageing. More accessible Melnik 55 and Ranna Melnishka. Cabernet, Merlot, Syrah complement.
The wine region of Thrace
Turkey's largest wine basin (~40% of national production) on the European shore, rolling hills between the Black Sea, Aegean and Marmara, temperate Mediterranean climate. Papazkarası and Kalecik Karası are the native signature reds: juicy red fruits, gentle spice and supple tannins. Cabernet, Merlot and Syrah in structured full reds. Adakarası for fresh rosés.
The word of the wine: Concentrator
A device that removes water from grape must by reverse osmosis or entropy system. Its proponents say that it is better to remove water than to add sugar to produce more alcohol. The improperly used concentrator can also exaggerate bad tastes or greenness of tannins.
