Elegant, light reds with a pale ruby robe, fine tannins and a silky palate with preserved acidity, with signature aromas of red fruits (cherry, raspberry), gentle spices and floral notes. Also fresh rosés. Often vinified using the traditional qvevri method; defines the viticultural identity of Guria. Indigenous Georgian black variety grown mainly in the Guria region in western Georgia.

The wine region of Orange

High-altitude Australian region (600-1,100 m) in New South Wales: signature Chardonnay as king white — racy and mineral with notes of lively citrus, green apple, pear, white flowers and a chalky touch, chiselled acidity preserved by the cool climate. Pinot Noir, spicy Shiraz and structured Cabernet as elegant reds (cherry, pepper, blackberry, cedar). Taut Sauvignon Blanc as backup. GI (1997), volcanic basaltic soils on Mount Canobolas (extinct volcano), cool high-altitude climate.

Iconic Hunter Valley: a Sémillon unlike any other, straight, low-alcohol dry whites with vivid citrus when young, evolving over 10-20 years toward honey, toast and lanolin. Medium-bodied Hunter Shiraz, spicy and earthy (leather, red fruits). Also round Chardonnay and aromatic Verdelho.

The word of the wine: Amylic

Aroma reminiscent of banana, candy, and sometimes nail polish, particularly present in primeur wines. The amylic taste is reminiscent of the aromas of industrial confectionery and does not reflect a great expression of terroir.
