Made as dry whites (Gaillac AOC), sweet passito-style wines and especially iconic sparkling wines: Blanquette de Limoux AOC and Blanquette méthode ancestrale AOC (the oldest documented sparkling method, 1531 at Saint-Hilaire). Also in Crémant de Limoux AOC. Native South-West French variety.

The wine region of Limoux

Languedoc AOC south of Carcassonne, cradle of French sparkling wine (ancestral method born in 1531, predating Champagne). Blanquette de Limoux from Mauzac (min. 90%) is the signature with notes of green apple, ripe pear, white flowers and a honeyed touch typical of the grape, tender palate. Finer Crémant de Limoux on Chardonnay and Chenin (citrus, brioche).

Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault.
