California sustainability: latest developments and innovations

In the produce aisle of most US supermarkets, choices are clear: the organic section is to the right, or at the very least, organic items are identified on packaging or shelf-talkers. Shoppers willing to pay a few cents more per pound for broccoli grown without synthetic chemicals know where to reach. In the wine aisle? Not so much. Leading wine professionals sign letter calling for alternative packaging

The open letter, spearheaded by Wine Traders for Alternative Formats (WTAF), highlights the environmental impact of glass manufacturing and recycling. Alternative formats such as boxed wine, canned wine, kegs, paper bottles and pouches all have much a smaller carbon footprint than glass. Oliver ...

In November of 2021, Spain’s DO Penedès announced a massive overhaul of their bylaws with many changes aimed at re-orienting the region via a “10-year plan”. One of the key aspects was a new classification system for the estates of the region called, “Vi de Mas”, the first five of which have just been certified. While most wine regions looking to implement a system use the so-called “Burgundian Pyramid” as a structure, Penedès took a different approach that merged some of the Burgundian sy ...

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
