The Domaine Matsu winery, located in the Toro region of Spain, is an authentic land where tradition and modernity coexist harmoniously. The name "Matsu" means "waiting" in Japanese, a philosophy that is reflected in their patient and respectful approach to wine making. Located in the northwest of Spain, the estate covers an area of 40 hectares. The vineyard is situated at an altitude of 750 meters, which contributes to an ideal climate for viticulture with cold winters, hot summers, and moderate rainfall. These climatic conditions, combined with a sandy soil rich in minerals, create an ideal environment for viticulture. Domaine Matsu is recognized for its ecological and biodynamic principles. They do not use pesticides or chemical fertilizers, preferring to use natural methods to maintain the health of their vines. The wine produced is organic and vegan, a reflection of their commitment to respecting the environment and creating a wine that is a true reflection of its terroir. The estate primarily produces red wine from the Tinta de Toro grape, a native variety of Tempranillo. The wines produced by Matsu are characterized by their richness, complexity, and finesse. They feature notes of ripe black fruits, leather, licorice, and spices, with a long and savory finish. Domaine Matsu produces three main wines: "El Picaro", "El Recio", and "El Viejo". Each wine represents a generation of winegrowers and uniquely express the family values: respect for nature, hard work, and passion for wine. In addition to viticulture, Domaine Matsu is also involved in conservation initiatives, including the protection of local birds of prey.
