Discover the grape variety: Verjus

A very high-acid variety grown not for wine but for verjuice production — the tart unripe grape juice used in traditional cooking to acidify sauces and meats. Now virtually extinct, it bears witness to French gastronomic and viticultural heritage and is preserved in varietal collections for its historical interest. A historic French white grape specific to medieval verjuice.

The wine region of Citrusdal Mountain

Sub-region of the Olifants River in Western Cape (western end, 160 km north of Cape Town, vineyards among the highest in the country at 490-670 m, sandy and schistose draining soils, arid climate with scorching days and cool altitude nights preserving acidity): Grenache as the signature king variety in old vine bush vines (Piekenierskloof, 1950) — concentrated profile with spiced red fruits. Pinotage, Syrah, Sauvignon Blanc and Chenin Blanc as complements.

The wine region of Western Cape

Cradle of South African wine. Signature Chenin Blanc (Steen, 20%) in ample, fresh whites with notes of quince, yellow apple, honey and acacia flower, from crisp dry to sweet. Sharp, iodised Sauvignon Blanc (Walker Bay, Constantia), balanced Chardonnay. Reds: emblematic Pinotage with roasted aromas (coffee, plum, smoke), firm Cabernet Sauvignon, spicy Syrah.

The word of the wine: Cryptogamic

Refers to diseases transmitted to plants by a fungus.
