The wine region of Blanquette méthode ancestrale

France's oldest sparkling AOC, from the Limoux country of Aude (AOC 1938). Natural ancestral method with no liqueur de tirage: partial fermentation then bottled in March on a descending moon, in-bottle secondary fermentation at 6–7°C.
