Discovering the wine region of Aragon

Aragon is one of Spain's 17 autonomous communities. Located in the North of the country, it stretches from the imposing Pyrenees mountains in the South to the vast Central Iberian plateau. The word of the wine: Malolactic fermentation

Called second fermentation or malo for short. It is the degradation (under the effect of bacteria) of the malic acid naturally present in the wine into milder, less aggressive lactic acid.
