Largest Grand Cru of Morey-Saint-Denis (16. 9 ha) in the Cote de Nuits, 100% Pinot Noir: deep red combining the power of neighbouring Gevrey-Chambertin and the grace of Chambolle-Musigny — dense ruby robe, nose of black cherry, blackberry, raspberry then truffle, undergrowth, leather and spices at maturity. This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
