Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Flagship Languedoc sparkling AOC (1990) in traditional method: signature blend of Chardonnay and Chenin (≤90%, Chenin 20-40%) complemented by Mauzac Blanc and Pinot Noir in white and rosé — fine, persistent bubbles, pale robe with green hints, signature aromas of apple, brioche, hazelnut from Chardonnay, red fruits from Pinot, chiselled freshness and minerality. 15-month minimum lees ageing, finesse compared to Champagne.

Largest single French vineyard, dominated by sunny, generous reds. Spicy Syrah, candied Grenache (ripe fruit, garrigue), structured Carignan, deep Mourvèdre, supple Cinsault. Stars: structured Corbières, Minervois, Faugères, Saint-Chinian; round Côtes-du-Roussillon. Legendary vins doux naturels: Banyuls and Maury (fortified Grenache) with notes of cocoa, fig, prune.
