Legendary DOC (1966) on the volcanic hills of Lake Bolsena in the province of Viterbo, tufa soils and temperate lacustrine climate. Signature white blend: Trebbiano Toscano/Procanico (50–65%), Malvasia Bianca (10–20%) and Trebbiano Giallo/Rosetto (25–40%). Dry and lightly aromatic with crisp apple, citrus, white blossom and mineral hints, lively acidity. Named after a medieval German bishop.
