The wine region of Côtes de Sambre et Meuse

Belgium's first organized PDO (Wallonia, 2004) in the Meuse basin (Sambre, Ourthe, Amblève, Semois), ~30 ha on clay-limestone soils, cool northern climate. Chardonnay flagship white: lively and straight with green apple, citrus, white flowers and mineral touch, tense thirst-quenching acidity. Full Pinot Gris, floral Auxerrois and aromatic Müller-Thurgau in whites. Airy Pinot Noir in light red.

The wine region of Wallonie

Southern Belgian vineyard (~36% of national production), clay-limestone and schist soils, cool temperate climate. Signature Chardonnay as white king (32% of Belgian vineyard): taut and precise with notes of citrus, green apple, white flowers and chalky touch — base of fresh sparklers and chiseled whites on the rise. Aerial Pinot Noir (cherry, raspberry, undergrowth), round Pinot Meunier. Crémant de Wallonie as flagship specialty.

The word of the wine: Bouquet

The tertiary aromas that develop during aging and characterize the wine at its peak. This term is improperly used to refer to the aromas of a wine in general.
