Simple and fresh dry whites, pale golden colour, supple mouth with preserved acidity, with understated aromas of citrus and southern white flowers. Early-ripening and productive. Grown in small quantities in southern France, occasionally used in southern blends. French white grape bred in 1958 in Montpellier by Paul Truel (Chasselas x Ugni Blanc).

The wine region of Calatayud

DO of Aragon at altitude (550-1,040 m), kingdom of Garnacha (>75% of the vineyard) — Garnacha de Aragon clone genetically the most intact in the world. Concentrated signature reds with notes of ripe cherry, raspberry, blackberry, garrigue, sweet spices and a peppery touch, round tannins and a sunny palate — old vines (up to 100 years) give depth. 'Superior' designation for Garnacha over 50 years old. Harsh continental climate, schist soils.

Signature Garnacha: generous and sun-drenched with signature ripe cherry, crushed strawberry, garrigue, kirsch, sweet spice and a balsamic touch, round tannins and a warm, alcoholic palate. 4 major DOs: Cariñena the largest (old vines), Calatayud high-altitude, Campo de Borja and Somontano at the Pyrenean foothills. Fresh Macabeo and Garnacha blanca whites.

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
