Made as dry whites (Gaillac AOC), sweet passito-style wines and especially iconic sparkling wines: Blanquette de Limoux AOC and Blanquette méthode ancestrale AOC (the oldest documented sparkling method, 1531 at Saint-Hilaire). Benchmark of Mexican wine (~90% of national output), Valle de Guadalupe at its qualitative heart. Dense, sun-drenched reds with signature notes of blackberry, plum, sweet spice, Mediterranean herbs and a smoky touch, round tannins and a warm palate.
