Coloured, structured reds with a deep ruby robe, firm tannins and fresh acidity, showing aromas of blackcurrant, blackberry, red pepper, spices, herbs and balsamic notes evoking cabernet sauvignon. Disease-resistant interspecific variety (mildew and powdery mildew), driving force of organic vineyards in northern Europe: Switzerland, Germany, Belgium, Netherlands, UK and Denmark. Hybrid created in the 1990s by Valentin Blattner in Soyhières (Swiss Jura).

Largest German-speaking wine canton of Switzerland, 620 ha around the lake. Star Pinot Noir (Blauburgunder): fine, fresh reds with notes of cherry, raspberry, undergrowth and sweet spices, silky tannins and a delicate style. Also light, floral Müller-Thurgau and precise Chardonnay. A unique speciality: Räuschling, a rare native white almost exclusive to the canton ("vine of the lake"), lively with citrus, white flowers and taut minerality.
The word of the wine: Sorting
Action which consists in removing the bad grains, not ripe or affected by the rot. We often use vibrating sorting tables which, by shaking, make the impurities fall to the ground. In the case of sweet wines, we speak of harvesting by successive selections, in several passages, to select the very ripe grapes each time.
