Almost absent from commercial cultivation, preserved in INRAE variety collections for its heritage value, it testifies to the pre-phylloxera ampelographic diversity of the southern French vineyard. The wine region of Denmark
Young Nordic vineyard in full expansion thanks to warming (~175 ha in 2022), four IGPs: Bornholm, Funen, Jutland, Zealand. Cool temperate climate, resistant PIWI hybrid varieties. Solaris star (>60% of production): white at 13° with green apple, citrus, gooseberry, white flowers and cut herbs, vivid acidity recalling New Zealand Sauvignon. Also fruity Rondo and Regent reds, supple Léon Millot, firm Cabernet Cortis.
The word of the wine: Cinsault
Cinsault is a southern black grape variety that can be found in the blends of most Mediterranean appellations, but most often as an accessory grape variety. It is undoubtedly most present in certain rosé wines (in Corbières, Côtes-de-Provence, etc.): it gives these wines highly appreciated aromas of strawberry, peach and raspberry. In vin de pays (IGP), it is often vinified on its own, usually as a rosé.
