Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Friulian DOC (1985) on the karst plateau between Trieste and Slovenia, red ferrous terra rossa and white limestone soils, Bora wind. Vitovska is the signature indigenous white: dry and delicate with pear, sage, stone fruit, floral and saline mineral notes — fresh or macerated "orange" style. Terrano (Refosco family) as the red on terra rossa: deep ruby with wild dark fruit, blood orange and ferrous minerality, cutting acidity.
