Structured and rich whites and rosés with a pale salmon or golden robe, full mouthfeel and moderate acidity, with aromas of yellow fruits (pear, peach), candied citrus, white flowers, fennel, garrigue and schist mineral notes. Good ageing potential. Star of the great identity whites of Roussillon (Côtes du Roussillon AOC, Collioure AOC) on schist soils. A grey-skinned mutation of the Aragonese Grenache Noir.

The wine region of Suisun Valley

Solano County AVA east of Napa (1982, 29 grapes): Petite Sirah signature red king — dense, structured and inky reds with concentrated black fruit and firm tannins. Also round Merlot and ripe Cabernet Sauvignon on western slopes, spicy Zinfandel and Grenache. Albariño, Verdelho and Vermentino as aromatic whites. Coast Range to the west and Suisun Bay breezes temper Central Valley heat.

Powerful, sunny reds: dense Napa Cabernet Sauvignon (blackcurrant, chocolate, tobacco, ample tannins), spicy, jammy Zinfandel from the Sierra Foothills, silky red-fruited Pinot Noir on the cool coast (Sonoma, Russian River, Central Coast). Opulent, buttery Chardonnay, notes of yellow fruit and vanilla. Varied climate, from the hot interior to the Pacific-cooled coast. 80% of US production, 139 AVAs including Napa (1st AVA, 1981).

Any wine loaded with CO2 (carbon dioxide), which is revealed in the form of bubbles, reinforcing the freshness effect in the mouth. This gas production is the result of what is called the second fermentation in the bottle. It occurs in champagnes and sparkling wines such as crémants.
