Discover the grape variety: Encruzado

Structured, aromatic dry whites with a pale golden robe, an ample palate and preserved acidity, with signature aromas of citrus (lemon), white-fleshed fruits (peach, pear), white flowers (acacia) and granitic mineral notes. Fine ageing potential, sometimes barrel-aged. Absolute star of Dão DOC, considered the great white wine of the region, excelling as a single variety. The wine region of Mendoza

World capital of Malbec: powerful, deep reds with blackberry, plum, violet and sweet spice, round tannins and vivid fruit. Also firm Cabernet Sauvignon, supple, juicy Bonarda, aromatic floral white Torrontés. High-altitude vineyards (800-1,700 m) at the foot of the Andes, dry continental climate irrigated by glacial waters. ~80% of Argentine output across 150,000 ha.

The word of the wine: Malolactic fermentation

Called second fermentation or malo for short. It is the degradation (under the effect of bacteria) of the malic acid naturally present in the wine into milder, less aggressive lactic acid. Some producers or wineries refuse this operation by "blocking the malo" (by cold and adding SO2) to keep a maximum of acidity which carries the aromas and accentuates the sensation of freshness.
