Structured, tannic reds, deeply coloured, with aromas of blackcurrant, blackberry, cedar, tobacco and graphite, underpinned by firm acidity and fine ageing potential. Cornerstone of the great Médoc estates (Pauillac, Saint-Estèphe, Saint-Julien) and signature of Napa Valley, Coonawarra and Maipo. The wine region of Sebino

Lombardy IGT south of Lake Iseo (Brescia province, immediate neighbour of Franciacorta), glacial morainic hills, stony calcareous soils, temperate climate moderated by the lake. Chardonnay is the signature white — generous and taut with yellow apple, pear, citrus, brioche, hazelnut and mineral notes, often the base for fine sparkling wines. Lively Pinot Bianco and ethereal Pinot Nero as whites. Supple Merlot, firm Cabernet, noble Nebbiolo and vivid Barbera as varietal reds.

The wine region of Lombardia

Three poles. Franciacorta DOCG, Italy's answer to Champagne: elegant brioche traditional-method sparklers (Chardonnay, Pinot Noir, Pinot Blanc), fine bubble and mineral profile. Alpine Valtellina: Nebbiolo (alias Chiavennasca) with fine tannins and red fruits, powerful Sforzato passito. Oltrepò Pavese: fresh Pinot Noir and fruity-sparkling Bonarda.

The word of the wine: Hat

Solid part (marc), composed of pips and skins (sometimes of the stalk), which forms at the top of the tank during fermentation. The pigeage consists in breaking this cap to put back in suspension these elements and to favour the exchanges between the juice and the skins.
