Alkaline limestone and schist soils with good water retention bring minerality and depth. Very hot summers (30°C, peaks 40°C) as mountain ridges limit sea breezes; cool nights.

Sharp, iodised Sauvignon Blanc (Walker Bay, Constantia), balanced Chardonnay. Reds: emblematic Pinotage with roasted aromas (coffee, plum, smoke), firm Cabernet Sauvignon, spicy Syrah.
