Deep, velvety reds with an intense purple colour, showing aromas of blackberry, black plum, violet, cocoa and gentle spice. Round tannins, fleshy palate, peppery length. The wine region of Prince Edward County

Ontario appellation on a Lake Ontario peninsula, one of Canada's most northerly. Microclimate moderated by the waters, fractured limestone soils at Hillier. Signature Pinot Noir as cool-climate king red: fine and silky with red cherry, raspberry, underbrush, dried flowers and a chalky mineral touch, fine tannins and elegant palate. Taut precise Chardonnay (citrus, white flowers, nut butter), lively Riesling.

The wine region of Ontario

World reference for Canadian Icewine: exceptional sweet wines from grapes frozen on the vine, golden colour, signature notes of candied apricot, mango, honey, citrus and exotic fruits, opulent sugar balanced by taut acidity (Vidal for fruit, Riesling for finesse). Cool-climate still wines: mineral, lively Riesling, precise Chardonnay, fine Pinot Noir (cherry, undergrowth), peppery Cabernet Franc. ~5,500 ha on the Niagara Peninsula between Lake Ontario and the escarpment, VQA.

The word of the wine: Fermentation

The process by which grape juice becomes wine, thanks to the action of yeasts that transform sugar into alcohol.
