Discover the grape variety: Baga

Structured and tannic reds with a deep colour and high acidity, on aromas of black cherry, blackberry, plum, spices, leather, tobacco and mineral notes. Tannic and late-ripening, it requires long ageing to round out, then offers fine keeping potential. The absolute star of Bairrada DOC in central Portugal (clay-limestone baga soils), also made as traditional method sparkling wines and taut rosés. Native Portuguese variety, long underrated and now rehabilitated.

The wine region of San Gimignano

Medieval Tuscan town with famous towers, vineyards at 200-400 m on clay-limestone hills (Siena). Vernaccia di San Gimignano white king (indigenous noted from 1276, Italy's first DOC in 1966, DOCG 1993): crisp and floral with green apple, citrus, fresh almond and mineral touch, slightly bitter finish — precise and upright. Chianti Colli Senesi and San Gimignano Rosso in fruity Sangiovese. Elegant whites at the Tuscan table.

The wine region of Tuscany

Kingdom of Sangiovese: upright reds with cherry, plum, dried herbs and leather, lively acidity and firm tannins. Fleshy, food-friendly Chianti Classico DOCG, deep long-ageing Brunello di Montalcino (spice, tobacco, ripe black fruit), elegant Vino Nobile di Montepulciano. On the coast, Bolgheri crafts the opulent Cabernet- and Merlot-based 'Super Tuscans'. Some fresh white Vernaccia.

The word of the wine: Hygrometry

Humidity level of the cellar necessary for a good ageing of the wines. The recommended hygrometry is around 70% in order to guarantee a good elasticity of the corks while preserving the labels.
