The wine region of Markopoulo

PGI of eastern Attica defined by the municipality of Markopoulo Mesogaias (Greece, PGI 1993, old-vine dry-farmed vineyards, Mediterranean climate): Savatiano signature royal white (up to 80%) — ripe, juicy profile with distinctive saline freshness, structure and fruity depth on stony soils. Assyrtiko, Athiri, Roditis, Malagousia and Aidani in complementary blends (≤20%), predominantly dry whites, Dionysian heritage through six local wineries.

The wine region of Continental Greece

Vast region of central Greece (Attica, Boeotia, Euboea, Phocis. ), ~1/3 of national output.

The word of the wine: Thermoregulation

Control of the vinification temperatures (by circulating hot or cold water on the walls of the vats, for example). This is a major step forward, which in particular helps to preserve the freshness of the aromas threatened by excessive temperature rises during fermentation.
