The wine region of Lake Erie North Shore

Canada's southernmost VQA (north shore of Lake Erie, ~42 degrees N, Tuscan latitude), ~600 ha with Ontario's highest heat accumulation, sandy-gravelly soils. Riesling signature white king: taut with citrus, white peach, apple, white flowers and mineral touch, vibrant acidity. Spiced Cabernet Franc, supple Merlot and airy Pinot Noir in reds. Signature speciality: golden concentrated icewine (apricot, honey, candied citrus) from early winters.

The wine region of Ontario

World reference for Canadian Icewine: exceptional sweet wines from grapes frozen on the vine, golden colour, signature notes of candied apricot, mango, honey, citrus and exotic fruits, opulent sugar balanced by taut acidity (Vidal for fruit, Riesling for finesse). Cool-climate still wines: mineral, lively Riesling, precise Chardonnay, fine Pinot Noir (cherry, undergrowth), peppery Cabernet Franc. ~5,500 ha on the Niagara Peninsula between Lake Ontario and the escarpment, VQA.

The word of the wine: Trimming

A vineyard operation consisting of pruning the upper part of the branches after lifting, either manually or using a trimming machine attached to a high-clearance tractor.
