Discover the grape variety: Catawba

Aromatic and sweet whites and rosés, with a supple mouthfeel and preserved acidity, with intense aromas of fresh grape, strawberry, raspberry, flowers and the characteristic foxy note (the typical musky animal character of labrusca). Often vinified as medium-sweet, sparkling demi-sec and grape juice. Historic star of Ohio (Lake Erie), New York (Finger Lakes), Missouri and Ontario vineyards. A Vitis labrusca hybrid discovered around 1820 in North Carolina, one of the oldest American varieties.

The wine region of Mâcon-Bussières

Mâcon geographical denomination (2005) in the commune of Bussières (southern Mâconnais) between the Petite Grosne and Fil: Chardonnay in pale gold whites with an elegant profile — spring flowers (acacia, wild white rose) and autumn fruit (pear). Gamay in reds and rosés. Vineyards at 250–350 m on two opposing slopes, a transition zone between sedimentary rock and crystalline basement — acid sandy-clay soils and stony soils from hard limestone.

The wine region of Burgundy

Absolute reference for great terroir wines: opulent, mineral Chardonnay in whites (chiselled Chablis, buttery Meursault, majestic Montrachet), fine and silky Pinot Noir in reds (full-bodied Gevrey, structured Pommard, delicate Volnay). Exceptional age-worthy wines with complex notes - red fruits, undergrowth, butter, hazelnut. Some lively Aligoté and light Gamay (Mâconnais). 29,500 ha, 84 tiered AOCs (Régionale, Village, 1er Cru, Grand Cru), 1,247 UNESCO Climats.

The word of the wine: Botrytis cinerea

This fungus, also called noble rot, develops during the over-ripening phase and is an ally of great sweet white wines, when it concentrates the juice of the berries. It requires the humidity of morning fogs and beautiful sunny days, gives musts very rich in sugar and brings to the wines the famous taste of "roasted".
