Roussane is a white grape variety, planted on an area of more than 700 ha. Originally from Montélimar, it is also found in Savoie, Languedoc and Roussillon, and grows very well in calcareous, poor, stony soil. It prefers to be pruned short. Roussane is also called fromenteau, barbin or bergeron. The young leaves are bubbled with fine down. When adult, they become thicker. It flowers in June and matures in mid-September. The grapes are cylindrical in shape, the berries are small and turn red when ripe, and the wine produced from pure Roussane is of extraordinary quality. It has a delicate aroma reminiscent of coffee, honeysuckle, iris and peony. The taste of this wine improves with age. The wine region of Cevennes is located in the region of Pays d'Oc of Vin de Pays of France. The word of the wine: Maceration
Prolonged contact and exchange between the juice and the grape solids, especially the skin. Not to be confused with the time of fermentation, which follows maceration. The juice becomes loaded with colouring matter and tannins, and acquires aromas. For a rosé, the maceration is short so that the colour does not "rise" too much. For white wines too, a "pellicular maceration" can be practised, which allows the wine to acquire more fat.
